一、營業(yè)狀況

1、4月1日~~~4月30共計(jì)營業(yè)額約為60萬元2、主要婚宴為

（1）4月1日18桌標(biāo)準(zhǔn)588元

（2）4月24日36桌標(biāo)準(zhǔn)600元不標(biāo)準(zhǔn)計(jì)算婚宴營業(yè)額為3.2萬元左右3、其它消費(fèi)為57萬元,平均日消費(fèi)為2萬元

4、餐飲本月主要是單位消費(fèi)為主,零點(diǎn)消費(fèi)很少,5、本月未能完成酒店下達(dá)的指標(biāo),主要原因1是酒店下達(dá)的指標(biāo)不符合實(shí)際,另外部門在營銷方面和服務(wù)方面都有存在著不足之處.

二、員工工作情況

1、員工積極性始終欠佳2、員工工作意識不夠

3、員工缺乏對用餐顧客的熱情度4、衛(wèi)生工作有所改進(jìn),但不能持之以恒

三、管理調(diào)整情況

1、對管理層進(jìn)行了調(diào)整,增加了一名主管人員2、加強(qiáng)餐飲區(qū)域通道及公共衛(wèi)生的跟進(jìn),并持速對該區(qū)域衛(wèi)生定期進(jìn)行清理,衛(wèi)生得到了明顯的改進(jìn).

3、服務(wù)目前存在的問題主要是員工的服務(wù)意識欠缺,員工情緒化較普遍,本人也采取了一些爭對性的措施,比如

（1）員工本性難改的問題采取了換人措施（2）實(shí)行跟包服務(wù).（3）做員工思想工作.4、培訓(xùn)方面主要是針對于禮節(jié)和禮貌在餐前進(jìn)行培訓(xùn),員工在此方面有所提高,其它的培訓(xùn)較少,主要以管理人員現(xiàn)場指導(dǎo)為主,下月開始要加強(qiáng)此方面的培訓(xùn).

5、活動方面部門一直沒有開展,主要是餐飲零點(diǎn)生意不是很好,推出以后不一定有效果,目前部門正在制作一份清涼一夏活動的方案,計(jì)劃在四月份出臺上報審批,五月份開始操作,其中需要贊助的將上報采購員.

四、對餐廳的管理也出臺了一些相關(guān)制度,但是各小組落實(shí)的很慢不到位.關(guān)鍵問題檢查監(jiān)督與指導(dǎo)力量不夠,部門今后應(yīng)加強(qiáng)此方面的管理.下月工作計(jì)劃

1、加強(qiáng)服務(wù)培訓(xùn)（見培訓(xùn)計(jì)劃）.

2、制作一份清涼一夏活動的方案,爭取在月底這前報總經(jīng)辦3、提高員工節(jié)能意識,并做好酒店財(cái)產(chǎn)的保管工作4、天氣開始轉(zhuǎn)熱,做好滅蟲滅蠅工作

5、加強(qiáng)員工的勞動紀(jì)律及員工的考勤制度6、配合酒店做好淡季營銷工作
