1.本年度餐飲部新增加營業(yè)經(jīng)營項(xiàng)目有茶室、大堂吧、豆撈餐廳、西餅屋，增加的各營業(yè)項(xiàng)目經(jīng)過近半年左右的試營業(yè)、營業(yè)后，各項(xiàng)工作已逐漸步入正軌，服務(wù)質(zhì)量也在不斷提高，豆撈開業(yè)不到3個(gè)月，目前生意日漸紅火，客戶好評不斷。2.中餐廳由年初的13個(gè)包廂擴(kuò)展到目前的21個(gè)包廂，提高了中餐廳的接待能力，豐富了包廂的類別，緩解了高峰期客人訂不到包廂的情況。

高標(biāo)準(zhǔn)完成國家衛(wèi)生城市迎檢工作。

市在進(jìn)行國家衛(wèi)生城市評審期間，我酒店作為市衛(wèi)生監(jiān)督局重點(diǎn)推薦迎檢單位，經(jīng)過了市級、省級、國家級衛(wèi)生權(quán)威部門的明察暗訪，得到了各級領(lǐng)導(dǎo)的好評。(三)

部門激勵(lì)機(jī)制的完善。

1.服務(wù)員及點(diǎn)菜員根據(jù)餐飲營業(yè)特點(diǎn)制定出服務(wù)員及點(diǎn)菜員提成方案，有效的調(diào)動(dòng)員工工作積極性。

2.對酒店的優(yōu)秀員工、優(yōu)秀部門及微笑大使評選活動(dòng)，鼓勵(lì)員工積極參與，并對活動(dòng)過程進(jìn)行監(jiān)督，最終本部門在兩次活動(dòng)當(dāng)中均取得不錯(cuò)的成績。

1.各部門員工堅(jiān)持每周至少一次固定時(shí)間培訓(xùn)。2.根據(jù)每天營業(yè)情況各部門自行安排培訓(xùn)時(shí)間。(五)

抓好規(guī)范管理，強(qiáng)化協(xié)調(diào)關(guān)系,提高綜合接待能力。

1.建立看菜制度，每天包廂客人用餐結(jié)束后，由廳面通知點(diǎn)菜員及廚師長對客人用XXX國際酒店餐飲部201*年度工作總結(jié)

1.部分菜出品質(zhì)量有時(shí)不夠穩(wěn)定,如湯類、燕鮑翅類；高檔菜不夠豐富。2.廳面的服務(wù)質(zhì)量還不夠高，員工個(gè)性化服務(wù)欠缺。3.點(diǎn)菜員的技能不夠熟練，客戶關(guān)系方面力度做的不夠4.員工培訓(xùn)力度不強(qiáng)。5.節(jié)能降耗工作不夠完善。

6.對員工考核沒有形成科學(xué)、合理、有效的考核辦法。
