一名新廚師的心得體會

心得體會

各位領導同事,大家好!親愛的阿五家人們,大家下午好!

長時間以來,在店里師兄師姐的幫助和教導下我變得比以前更加的優(yōu)秀。同時,在這個過程中我也付出了艱辛的努力,通過不斷地學習和提高我在工作中做了一個小小的總結,還有一些生活中的一些學習心得體會,很高興趁著這次發(fā)言的機會,在這里和同事們一起分享。很興奮也很榮幸。

我認真的總結了一下,基本上有以下五個方面。

第一,首先我們廚師需要適應市場經(jīng)濟的發(fā)展,認清餐飲業(yè)發(fā)展的趨勢。市場經(jīng)濟是競爭的時代,即所謂“適者生存”,我們廚師也不例外,要想生存,就得發(fā)展、創(chuàng)新,F(xiàn)代社會發(fā)展,要求廚師也適應潮流,適應餐飲業(yè)的發(fā)展,這就要求我們廚師要不斷學習、不斷更新自己專業(yè)知識、專業(yè)技能,補充新營養(yǎng),正所謂學無止境。

第二,我談一下廚師個人技藝的相關問題。廚師要想在自己的崗位上立足,處于不敗,那就要求我們有上乘的廚藝、過硬的本領。在菜肴制作過程中,一定要求自己認認真真做好每個菜,哪怕是最簡單的小菜,也要認真往炒、認真往調味。在態(tài)度上更應謙虛好學,不要礙面子,那樣吃虧的就是你,再有為了進步自己,應經(jīng)常參加各種專業(yè)技能培訓學習或者是參加比賽鍛煉自己。

第三,談談廚德,在我們餐飲業(yè),尊師重教、為人師表、帶徒授藝、拜師學藝這些都需要形成良好的風氣。廚德就是廚師發(fā)展的條件。

廚藝是一天天的學,一年年的進步,好廚德也就是一天天的積累,一年年的進步。只有廚藝廚德都高明的廚師,在廚師界才有影響,才有威望,才受人尊敬。和大家閑談時經(jīng)常提到一些廚師不講道德,敗壞廚師名聲。比如有些廚師在酒店工作故意浪費,甚至損公肥私。但我以為這只是一些少數(shù)廚師所為,只因他們目光短淺,而斷了自己的路。廚藝是我們追求的目標,廚德是每位廚師都應俱備的個人素質。

第四,學廚藝做廚師應持之以恒。俗話說,“三百六十行,行行出狀元”,但想當“狀元”,可并非易事,要想在廚師行業(yè)做出成績,成為廚師的楷模,就要求廚師在本職工作中有恒勁。而且要努力上進,發(fā)奮圖強,有認真鉆研的精神,必須要樹立干一行,愛一行的態(tài)度,把自己的專業(yè)技術學好、學精,達到唯我所用的目的。現(xiàn)在具我所知,有很多廚師轉業(yè),究其原因呢?我認為是他沒有恒勁,吃不了苦,受點打擊挫折后,對廚師行業(yè)失往信心;蚴菦]有鉆研到廚師行業(yè)里邊,廚師這行業(yè)可以說是學無止境,學海無涯苦作舟,活到老學到老。

第五,廚師還應該處理好與周邊的人際關系。有些廚師問:“人際關系和我們有什么關系?我以為關系很大,首先作為廚師應處理好與老板或經(jīng)理的關系,這不是說給老板或經(jīng)理送禮套近乎,而是應和領導勤溝通,相互交流信息與想法,相互交換意見。使彼此相互更加了解。這樣才有利于團結協(xié)作。作為廚廚師更應該和店里所有的同事打成一片,了解不同人的想法,向同事傳達自己優(yōu)秀的想法,不要以不尊重的口氣對待同事說話。要以身作則,嚴于律己,互幫互愛,努力學習專業(yè)知識,在同事中樹立自己的信任感,要言而有信,不要

刻薄對待同事。需要經(jīng)常以談心形式和同事或領導談廚藝,交流感情,切不可高傲自大。

總而言之,廚師要想在廚界有所為,必須有創(chuàng)新意識,且努力勤奮學習專業(yè)知識,使自己博學多才并不斷進步自己的藝術修養(yǎng),講究廚藝廚德,使自己在廚師生涯里有所作為,才有發(fā)展,從廚道路才會越走越寬。
